Southwest Quinoa Salad

Ingredients:

  • 1 cup cooked quinoa
  • ½ cup halved/quartered grape tomatoes
  • ¼ cup fresh chopped cilantro
  • ½ red pepper diced
  • 2 thinly sliced green onions
  • 1/4 cup diced red onion
  • ½ can of corn rinsed thoroughly
  • ½ can of black beans rinsed thoroughly
  • 1/3 cup extra virgin olive oil
  • 2 limes
  • 1 tsp. cumin
  • Salt & pepper to taste

Directions:  Put quinoa in a large bowl and add all of the above ingredients. Mix well & refrigerate.

    Thank you for sharing.. I am not a big fan of quinoa but this was awesome. I am going to make it. Hope it turns out like yours lol
