Seeded Almond Protein Bars

Ingredients:

  • ½ cup chopped slivered almonds
  • ½ cup shelled pumpkin seeds
  • ½ cup coconut flour
  • 2 tbsp. hemp seeds
  • 2 tbsp. chia seeds
  • 1/3 cup Goji berries
  • 1/3 cup coconut flakes
  • 1/3 cup vanilla almond milk
  • 1/3 cup whole oats
  • 1/3 cup coconut oil
  • 2 tbsp. coconut butter
  • ¼ vanilla flavored protein powder
  • ¼ cup honey or agave syrup
  • ¼ cup almond butter
  • 2 tsp. cinnamon

Preparation:

  1. Mix all ingredients very well in a large bowl & press into a 8×8 glass dish lightly sprayed with olive oil spray (Pam).
  2. Put in the refrigerator for at least 3 hours.
  3. Cut into 12 equal bars.

These are a little high in calories so portion control is very important. They have a lot of great nutritional benefits and are filling.
