Ingredients
Chicken prep
  • 4 each Boneless, skinless chicken breasts rinsed
  • 1 12.5 oz. can low sodium chicken broth
  • 1/8 tsp salt
  • 1/4 tsp ground pepper
Actual salad
  • 1/4 cup dried cranberries
  • 1/4 cup walnut halves
  • 1/2 medium red onion diced
  • 1 each celery stalk thinly sliced
  • 1/4 cup veganaise (can use light mayo)

Chicken prep
  1. In a crockpot, place chicken breasts in the bottom of the pot and do not overlap. SEason with salt & pepper & then pour the broth over the chicken. Cook on high for 3 hours. When done, remove the chicken from crockpot & shred meat with a fork.
Actual salad
  1. After shredding all chicken, add all remaining ingredients and enjoy with your favorite sprouted bread, pita, or all by itself.
